I was going to make muffins this morning but Marvel talked me into chocolate chip cookies instead. I decided to try using the Krusteaz Multi-Grain Pancake Mix that I use for muffins. They turned out very good! Luckily I remembered to write down what I used so I could repeat it again next time.
Multi-Grain Mini Chocolate Chip Cookies
1c Butter Softened
1c Sugar
2 Large Eggs
1t Vanilla Extract
2c Krusteaz Multi-Grain Pancake Mix
1c Mini Chocolate Chips
Heat oven to 350. Cream together butter, sugar, eggs and vanilla extract. Stir in pancake mix. Fold in mini chocolate chips. Measure out heaping teaspoons onto ungreased cookie sheet. Bake for 8-11 minutes.
You can change this up in several ways. I know it would be great with much less sugar. You can use regular size chips, nuts, dried fruit, or any other mix-ins. You could even try out a different brand of multi-grain pancake mix. If I was doing it again I would probably try 325 for a little bit longer. They were so yummy the way they are, so it's hard for me to justify changing it up.
